much better

Ok so apparrently lifeway farmer cheese is ok on scd and someone
pointed out $5/lb....Ok that's more sane then the price i saw on some
random food website where they wanted $109/lb for the stupid friendship
farmer cheese.

Fwd: bastardized orange chicken

Ok so here's my real attempt at a meal with scd. Problem with this was
that the coconut milk had sugar in it. Next time i'll make my own
coconut milk but, this works for now.

1 13 oz can of unsweetened coconut mlk
4 bags california mixed vedgitables
2 tbsp orange zest
2.5lbs boneless chicken thighs
2lbs mushrooms
1 small onion
1/4th cup honey

cook the 4 bags of vedgitable mix for a good hour on medium. This
ensures they're well cooked.
cook the chicken thighs in coconut oil for a good 45 mins on low
slice the mushrooms
chop the onion fine but not too fine (note) you should use 2 onions my
husband and i didn't think there was enough onion flavor in it)
when chicken is done, take it out of the pan and put it on paper towels
to drain off the extra oil.
when vegitables are well cooked slowly feed them into the food processor
till they are completely pureyed there should be no lumps in them if you
can help it.
fry the onions and mushrooms in a little olive oil till they are very
well done.
add the coconut milk and orange zest to the mix in the food processor
and let it blend for several minutes
chop the chicken into small bites
pour chicken mushrooms and onions, and mix into a large pot and set to
simmer
add the quarter cup of honey and let simmer for about half an hour
stirring ocationally.

I say unsweetened coconut milk. We had the missfortune that sweeteened
was all wallmart had. Amazon has unsweetened organic coconutmilk by the
case. I'll probably purchase a case of this next month to use with cooking.

We found almond milk today which i'm definitly excited about. I've been
looking for a good replacement to cows milk and now i have one that food
stamps will pay for. Thank god. They wont pay for almond flour which i
paid $65 for 10lbs....not pleased there but what can i do. Food stamps
certainly wont pay for certain bulk items like nuts and almond flour. I
wish they would.

Chris and i have been trying to save, but i feel like we start saving
or get to the point where we might be able to save and we really can't.
I figured we'd save about 100 or so this month, but it's turned around
and gone right back into the endless pit that is my health. Oh this may
not be quite so bad as it could be. Chris will eat the breads and things
that i make with the almond flour and nuts I'm just frustrated by the
fact that i can go out and buy chocolate or cookies or chips on food
stamps, but i can't buy things like bulk nuts of nut flours that i need
to survive.

Oh well i'm done ranting now.

My dad and chris are gonna dot he guy thing for newyears, my mom and i
may watch tv but it's more likely that i'll read or watch tv all night
till i pass out.

Going to make a banana cake tomorrow. Going to double the batch this
time though because i want to hopefully have it last longer then 3
days....I can't help it though i love the stuff lol and it's nice to be
eating bananas again.

I've got the makings for an scd pumpkin pie to. The pumpkin has sugar in
it to, blah but i'm going to go to amazon and see if i can find some
organic unsweetened pumpkin.

oh i forgot

friendship darey farmers cheese. I can't find this anywhere in this
pathetic state. We looked all over wallmart with no luck. I need a new
cheese cake recipe that's scd legal so that i can make me a cheese cake.

I've still not decided quite what i'm going to feast on for newyears
besides the orange chicken. Banana cake most likely because it needs to
be made soon. I can't wait for pumpkin pie though. that's going to be
tastey.

gearing up to add new foods to my diet

Since i started scd on Nov 28th, I've not been able to handle much.
Mostly pureyed vegitables and finaly chopped meat Nothing wrong with
that diet i guess but i'm definitly looking forward to breads muffins
and things of that nature. I ordered 10 lbs of almond flour today. I
guess we'll wait and see how it comes out but i'm excited to have
something new.

We're gearing up for newyears. Chris and i are going out on a date
tomorrow to go shopping for things that we will want for newyears. I'll
get some bananas hopefully a recipe for a cheese cake or something along
those lines. I'll also get the peanutbutter for the biscuits i'll make
once we get the flour.

Oh i got a recipe for a pumpkin pie maybe i'll feast on pumpkin for
newyears.

the scd diet and semi-success in making my stomach behave.

Well, 3 days or so after thanksgiving I decided to start the scd diet
(specific carbohidrate diet) The diet itself isn't terrible, but i've
had a lot of trouble getting used to pureyed food. The 2 times i made my
large batch of chicken soup i pureyed everything including the
chicken.....Blek, terrible. The pureyed chicken made me gag horribley.

Next time i make the soup i'll pass on pureying the chicken and just cut
it fine.

Chris suggested i try pureying a brocoli carrot coliflower mix and add
my favorite cheeses and skip pureying the meat. This creation came out
perfectly. Though, next time i wont microwave the vegitables I'll cook
them the right way.

I'm learning slowly to adapt to the diet. I'm allowed to use honey to
sweeten things, so i have a bit of fun with that. I still miss things
like chocolate or my bbq wheet thins but i'll live to. Since stufflike
that makes me deadly sick it's sure as hell not worth it.

I managed to make it through one of my flareups that decided to show
itself on christmas day. The abdominal/spinal pain kicked in first and i
thought the nausia would follow, but i took a phennergan and some ativan
and that settled things well enough. I was able to eat my version of
christmas dinner later so it worked out well enough.

Chris and i are doing well. Our 6 month aniversery was the 4th of this
month. and we've had our fare share of fun.

We've talked a lot about going to mcguires for dinner but there's not
really a point now. I can't eat 95% of what they serve because it's
probably got ingredience that will make me sick. Hmm wonder what we
should do for our 1 year aniversery. Red lobster mayb? I dont think
shrimp and lobster would end up making me sick if i make my choices right.

Scd has taught me quite a bit about cooking this past month. I've made
chicken stock, duck stock, ham stock to though that had too much salt to
be drinkable.....could have used it in cooking though. Then last week i
made my first banana cake. For those of you who are interested here's
the recipe.

5 large eggs
5 bananas
a teaspoon vanilla (optional)
a quarter cup honey (optional)
nutmeg
cynamin
ginger
cloves

The spices are optional but they spice it up more and make it more
desert like. The first time i made this i included the honey and vanilla
and spices. It came out incredible but too sweet.
When i made it for christmas i forgot everything accept the eggs and
bananas. It came out fine that way to, but i much prefer it with the
spices and vnilla so next time that's how i'll make it but i won't
include the honey......too sweet.

I have other scd recipes i still want to try. there's one for a cheese
cake that looks pretty good. I'd like to find a pumpkin pie type recipe
though still.

Oh, fyi, when you make that banana cake make sure the pan is well oiled
but pour out any excess oil or it will be hard to turn the thing out to
cool later.

got to love windows

Well, I guess this entry is more then just my rants on how java under
windows is managed.....where to start?

I've been in and out of the hospital a couple times since i last wrote,
but there's not much to really say. It tends to be round and round of
the same thing over and over again and we're not really getting
anywhere. There's no pattern to link my hospital stays to where we can
actually improve on things. Least that's how it looks to me and it's
frustrating.

They suggested maybe getting a medical port put in my arm to help so
that they wont have to find more and more places to stick me. At this
point dispite the risks i dont think i really have a choice. they're
sticking needles between my knuckles to find vains and i'll tell you
it's not a pleasant experience.

I started the SCD diet a couple weeks ago. It seems to help a bit, but
it's very hard to follow if you land in the hospital. I guess we'll see
how well it works over the next several weeks.

I switched back to windows a couple weeks ago and while i hate windows
I'll have to admit that it's nice to have things that generally just do
what they're told to with no real setup. The linux desktop just isn't
what i'd call useable. Things like the screen reader and synth tend to
randomly go boom which means your computer doesn't talk. There's more
things like that, but over all i'd almost rather use this for a desktop.

Christmas is getting closer, and it tends to make me reflect back on the
year. This year was particularly hard in a lot of ways. the constant
hospital stays, surgery, things like that. Dispite the dificulties
though, I have chris, and that's what i enjoy the most. We have so much
fun together, and we always have things we can do with eachother to keep
things exciting:)
